Golden chanterelle toast
Ingredients
2 servings250 g | chanterelles |
25 g | butter |
1 | finely chopped shallot |
100 ml | heavy cream |
salt | |
black pepper | |
2 slice(s) | of sourdough bread |

grated Kaltbach Gold | |
lemon zest | |

Preparation

Add the cleaned chanterelles in a hot pan with no butter. When the liquid evaporates, add the butter. Fry the chanterelles for a few minutes. Add shallot and season with salt and pepper. Sweat the shallot and then add the cream. Let simmer for a minute.

Heat a cast iron skillet over medium heat. Add the butter. Fry the bread on both sides and remove carefully. Place the chanterelles on top of the bread. Finish with grated Kaltbach Gold, lemon zest and dill. Serve immediately!
