Golden chanterelle toast

Ingredients

2 servings
250 g chanterelles
25 g butter
1 finely chopped shallot
100 ml heavy cream
salt
black pepper
2 slice(s) of sourdough bread
butter
For serving:
grated Kaltbach Gold
lemon zest
fresh dill

Preparation

  1. Add the cleaned chanterelles in a hot pan with no butter. When the liquid evaporates, add the butter. Fry the chanterelles for a few minutes. Add shallot and season with salt and pepper. Sweat the shallot and then add the cream. Let simmer for a minute.

  2. Heat a cast iron skillet over medium heat. Add the butter. Fry the bread on both sides and remove carefully. Place the chanterelles on top of the bread. Finish with grated Kaltbach Gold, lemon zest and dill. Serve immediately!
